Kelsey D's Favorite Giardiniera Recipes

The good folks over at Kelsey D's (they make some delicious giardiniera and muffaletta) have some tasty giardiniera recipes for you. They're pretty quick and simple too. Try 'em out and let us know how you liked them!

Kelsey D's Pasta Salad

Ingredients:

  • 1 pound rigatoni pasta (or pasta of your choice)
  • 1 cup giardiniera, drain that oil but keep it nearby
  • 1/4 cup of giardiniera oil
  • 1/2 an onion, finely chopped
  • 10 cherry tomatoes, halved
  • 1 packed of Italian seasoning (2 ounces)

How to make it:

  1. Cook the pasta according to the instructions on the package. Rinse in cold water, drain.
  2. Add the giardiniera oil to the pasta
  3. In a large bowl, mix giardiniera, onion, tomatoes and Italian seasoning
  4. Cover and chill for several hours. Stir before serving.

Kelsey D's Bruschetta

Ingredients:

  • 1 loaf of fresh French bread
  • 1/2 pound of sliced prosciutto or salami
  • 1 package of mozzarella cheese
  • 1/2 cup of olive oil
  • 1 small jar of pesto
  • A jar of Kelysey D's giardiniera

How to make it:

  1. Preheat the oven to 400 degrees Fahrenheit
  2. Slice the bread iabout 1/2 and inch and spread with olive oil
  3. Spread a thin layer of pesto on top
  4. place a slice of prosciutto or salami on top of the pesto
  5. Top it off with giardiniera and add some mozzarella on top
  6. Bake at 400 for 7-10 minutes or until cheese is melted

Kelsey D's Ultimate Spicy Giardiniera Sloppy Joe

Ingredients:

  • 1 pound lean ground beef
  • 1/2 cup hot giardiniera
  • 1 teaspoon yellow mustard
  • 2 teaspoons balsamic vinegar
  • 3/4 cup ketchup
  • 3 teaspoons brown sugar
  • 1 package of croissant buns

How to make it:

  1. In a medium skillet over medium heat, brown ground beef then drain it of all liquids
  2. Stir in the hot giardiniera, mustard, ketchup, balsamic vinegar and brown sugar. Mix well.
  3. Reduce the heat, simmering for about 30 minutes
  4. Put the meat on a bun and enjoy!
